Mayonnaise – the creme de la creme

The obvious application for mayonnaise is salads, but it’s more useful than that. It’s a good substitute for butter, mixed with tomato sauce or fresh tomatoes as a base for cooking fish slowly, and to finish off a sauce. I sometimes mix a little into a vinaigrette for added texture. I was pleasantly surprised with what I found for this survey.
